How To Make No Eggs, No Alcohol, Whole Wheat Christmas Plum Cake

Plum cake is a term used to describe a range of cakes created using fresh and dried fruits.  Despite the fact that this cake does not contain plums, the fruit, as the name suggests, alludes  to prunes or raisins. Plum cakes refer to an early type and form of fruit cake popular in  England that is now offered all over the world, including India, during the Christmas holiday season and festival. You can serve it as a dessert  after dinner or just with a cup of hot tea in the  evening. But the question is How To Make No Eggs, No Alcohol, Whole Wheat Christmas Plum Cake. Here’s my version of Christmas Cake made with wheat flour. You can bake in oven and on Gas as well.

How To Make No Eggs, No Alcohol, Whole Wheat Christmas Plum Cake

Ingredients :

  • 1 cup orange juice
  • 2 tbs dry cranberries
  • 1 tbsp green raisins
  • 1 tbsp black raisins
  • 2 tbsp chopped seedless dates
  • Fistful of dry fruits (chopped cashews, walnuts and sliced almonds)
  • 1 tbsp chopped dried apricots
  • 3/4 cup brown sugar
  • 2 spoon water
  • 1/2 tsp cinnamon (dalchini) powder
  • A pinch of nutmeg (jaiphal) powder
  • 1 nos cardamom (elaichi) powder
  • ¼ cup oil (any odourless)
  • 1/2 tbs cocoa powder
  • 1/4 cup oats powder (instant oats)
  • 3/4 cup wheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda

Method :

  • Take a mixing bowl, add 1 cup orange juice (grape juice/wine/rum is optional)
  • Add 2 tbs dry cranberries, 1 tbs green raisins, 1 tbs black raisins, 1 tbs chopped dried apricots, 2 tbs chopped seedless dates and fistful of chopped cashews, walnuts and sliced almonds, mix it and leave for 3-4 hours to absorb well.
  • Further heat up the pan, add 3/4 cup brown sugar
  • Cook until it starts melting
  • Add 2 spoon water, keep stirring to get thin/pouring consistency and turn off the stove.
  • Take a mixing bowl, pour sugar syrup in it
  • Add dry fruits and berries (soaked in orange juice)
  • Add 1/2 tsp cinnamon (dalchini) powder
  • Now Add a pinch of nutmeg (jaiphal) powder
  • Add 1 nos cardamom (elaichi) powder and mix it
  • Now Add 1/4th cup oil (any odourless)/virgin coconut oil, 1/2 tbs cocoa powder, 1/4 cup oats powder (instant oats) and 3/4 cup wheat flour (You can add 1 cup wheat flour if oats powder is not available)
  • Add 1/2 tsp baking powder
  • Now Add 1/4 tsp baking soda, mix all ingredients well and make thick batter
  • Add 2 tbs leftover orange juice and mix it
  • Further to bake cake, take a baking mould greased with oil and place a parchment paper in it.
  • Pour batter and add some chopped dry fruits on top
  • Keep the cake mould in preheated oven at 180⁰
  • Bake for 50-55 mins at 180⁰ (after 50 mins check once if it’s baked by inserting a toothpick in it)
