To make Stuffed Capsicum you need

  • 3 capsicum
  • 2 medium sized potatoes, boiled and mashed
  • 1 cup finely chopped onion
  • ¼ tsp salt tsp cumin
  • ¼ tsp turmeric powder
  • ⅓ tsp cumin powder
  • ½ tsp coriander powder
  • ¼ tsp fennel powder
  • ¼ tsp chilli Powder
  • ¼ tsp Dried mango powder
  • 1 tbsp Mustard oil

How to make Stuffed Capsicum

1. To prepare the stuffing, place a heavy bottom pan on medium flame and add oil to it. Once the oil is hot, add cumin seeds and wait for it to crackle for a few seconds.

2. Now add onion, salt, turmeric powder, cumin powder, coriander powder, chili powder and fennel powder. Fry for 3 to 4 minutes or till onions are golden brown.

3. Then add mashed potatoes and mix all four well. Lastly, add dried mango powder and salt as per taste.

4. Now cut the capsicum in half and remove the stalk and seeds. Sprinkle some salt inside the empty chili and apply it all around.

5. Preheat oven to 350 Fahrenheit.

6. Then one by one, fill the stuffing well in the capsicum and place the capsicum on the cookie sheet. Place the sheet on the middle rack of the oven and cook for 30 to 35 minutes or until the peppers are tender.

7. After cooking, squeeze fresh lemon juice on capsicum and serve hot.
