Easy Homemade Lemon – Pistachio Cake Recipe | Best Dessert Recipes

Ingredients :

  • 1/3 cup semolina (suji/rava)
  • 70 ml milk (with room temperature)
  • 1/3 cup plain flour (maida)
  • 50 gm butter (with room temperature)
  • 1/3 cup caster sugar (churned & seived white sugar is optional)
  • 1 tsp vanilla essence
  • Little Lemon zest
  • Handful of chopped California Pistachios
  • 1/4 tsp baking soda
  • 3/4 tsp baking powder
  • 2 tbs icing sugar
  • Couple of drops lime juice

Method :

  • Take a mixing bowl, add 1/3 cup semolina (suji/rava)
  • Add 70 ml milk (with room temperature)
  • Mix it and rest for half an hour to absorb milk
  • Add 1/3 cup plain flour (maida), again mix it (wheat flour optional but cake becomes very dense)
  • Take another mixing bowl, add 50 gm butter (with room temperature)
  • Add 1/3 cup caster sugar (churned & seived white sugar is optional)
  • Beat well with electric beater
  • Add 1 tsp vanilla essence, some lime zest (shred lime & take yellow part for natural lime essense), handful of chopped California Pistachios (Remove some pistachios aside to top on cake), 1/4 tsp baking soda and 3/4 tsp baking powder
  • Then add suji mixture and mix it well with spatula/electric beater
  • Take a baking loaf greased with oil & parchment paper in it
  • Keep the tray in 10 mins preheated oven at 180⁰ and bake it for 30-35 mins (To bake it on stove, preheat steamer for 10-15 min on medium flame along with a stand in it, then place cake tin, cover lid with a cloth and bake for 40-45 min)
  • Once baked rest cake to bring it to room temperature
  • To make glaze, take a bowl
  • Add 2 tbs icing sugar and couple of drops lime juice and mix it (Add gradually and make slurry texture)
  • Take cake on a serving plate
  • Drizzle glaze on it with the help of piping bag
  • Add some pistachios on top
  • Here’s your Deliciously Yummy Pista Lemon Cake ready!!!
