Whether it’s kids or elder no one loves to have lauki/ dudhi. Best to have during Summer and another idea to feed nutritious lauki (Bottle-gourd) to everyone. You can have it with anything – curd, chutney, pickle or aloo sabjee. So Dudhi Na thepla / Lauki Ka Thepla is another variation and option– a gift from Gujarati cuisine.

Dudhi Na thepla / Lauki Ka Thepla
Ingredients:
- 1.5 cup wheat flour
- a small piece of ginger
- 2 green chillies
- 200 gm bottle-gourd (Lauki) grated
- 1/2 tsp Turmeric Powder
- 1 tsp Kashmiri Red Chilli Powder
- A Pinch of asafoetida (Hing powder)
- 1/2 tsp sugar (optional)
- Oil
- Salt
Method:
- Pound a small piece of ginger (adrak) and two fresh green chillies
- Add it to 1.5 cup wheat flour (atta)
- Take 200 gm bottle-gourd / lauki / dudhi and grate it
- Press and remove water and keep it aside
- Add grated bottle-gourd into flour
- Add some coriander ,1/2 tsp Turmeric powder (haldi), 1 tsp Kashmiri Red Chilli Powder (this is for color only as we have added green chillie already), a pinch of asafoetida (hing), some salt per taste and 1/2 tsp sugar (optional)
- Mix everything and make a dough
- You may add curd also to make this dough (but it’s actually not needed as bottle-gourd has a lot of water
- If you find dough to be hard; then add back the water we removed from grated bottle-gourd
- Add 1 tsp oil
- Once dough is ready immediately make it, do not give it rest; as bottle-gourd keeps releasing water so do not rest it
- Now make small roundels and make it on pan
- first dry roast it and then apply oil on each side
- Dudhi Thepla is ready
- Enjoy with pickle, chutney, curd or potato sabjee
